Bread making with amaranth

I live in Mexico and have easy access to amaranth, a wonderful seed equal or better than soya. I have been mixing one cup of amaranth with flour and producing a nice bread. I tried with 2.5 cups of amaranth and 1 of flour but it did not rise well. Was tasty when I used honey to sweeten the dough. Any suggestions for receipes greatly appreciated.
