Hispanic Culinary Bibles

I offer the following list of cookbooks from the spanish speaking world, hoping that you find it useful and help me complete it. The intention is NOT that these be the best books, nor the best sellers, nor the newest vanguard thing. Instead, this is about listing a collection of those books that by TRADITION, have become the culinary CLASSICS of our kitchens, in our respective countries and regions. Cookbooks that have remained the favorite of our mothers and grandmothers and thus have come to be regarded as the culinary bibles, or authorities of our current Latin cuisines.

For some of these titles I have first hand knowledge of their authority, but others I can only guess about from what I have researched in the Internet. Therefore, I would greatly appreciate any contributions in regards to confirming or correcting the titles I have gathered for each region. Hope you enjoy them:

jamirez, may I offer up Dulce lo vivas/ Live Sweet: La Reposteria Sefardi/ the Sefardi Bakery (Spanish Edition) and Los Dulces del Convento: Recetas del Monasterio de Nuestra Senora del Socorro? I am a baker, and love to track down regional baked goods such as Spanish monastery / Sephardic dessert recipes. Both books are excellent. I purchased mine through Agapea.com.

Thank you AV8r, those are very interesting sources indeed. Sefardi and monastic cooking certainly had a significant influence in the evolution of Hispanic cooking and, who doesn't like pastries?? I also thank you for letting me know of Agapea. Looks like an excellent resource that I will enjoy exploring. Feel free to suggest any other "bible" for other countries or regions as well.
