Kayleen, If you could scroll through the many topics back there are a few discussions on pasta machines, brands, types. I had a hand crank Atlas and it was too much trouble.

You people are lucky I'm a packrat. My wife would disagree. I donated my machine many months ago but dug up the scans. I also still have the measuring cup: it holds ~14.5oz total, there are marks at ~7.5oz for eggs only, ~6.5oz for 2 eggs+water, and ~5.5oz for water only. I used those for rough measurements. The best thing to do is dump about 3/4 of the liquid and then slowly pour the rest until pea sized balls of dough start to form. That's the correct consistency.

I replaced it (and a Champion juicer) with a Omega J8003 Juicer although I haven't made pasta with it yet.

Yes, I have the manual for this pasta machine. The problem with my Pasta Express is that the motor has developed a loud and horrendous whine and the gears seem to be slipping in both the mix and extruding modes.
