Kayleen, If you could scroll through the many topics back there are a few discussions on pasta machines, brands, types. I had a hand crank Atlas and it was too much trouble.

C. burkhart,
This is very kind of you to give us this pasta machine link.

I was very impressed with one of your BRAVE book reviews
so I gave it a THUMBS UP on Feedback.

What type of machine is the pasta express? Is it a manual roller-type for fresh pasta, or an extruder type for making shapes?

If its the roller type, there are literally hundreds of great recipes on the web for fresh pasta. Just google.

If it's the other, I haven't a clue. Sorry.

I have a CTC Pasta Express X-2000 and just scanned the recipe and instruction booklet. I tried uploading JPEGs here on Amazon but they aren't very useable. So the PDFs are uploaded here:

Bass Cadet says:
You people are lucky I'm a packrat. My wife would disagree. I donated my machine many months ago but dug up the scans. I also still have the measuring cup: it holds ~14.5oz total, there are marks at ~7.5oz for eggs only, ~6.5oz for 2 eggs+water, and ~5.5oz for water only. I used those for rough measurements. The best thing to do is dump about 3/4 of the liquid and then slowly pour the rest until pea sized balls of dough start to form. That's the correct consistency.

I replaced it (and a Champion juicer) with a Omega J8003 Juicer although I haven't made pasta with it yet.

Hi guys...We had the good fortune of acquiring through Freecycle a Pasta Express 2000...or so we thought (re the "good" fortune). In looking for a manual, I came across the information that this item was recalled for safety reasons :-( Oh my. Does anyone more familiar with the machine know anything about this recall??? Is this machine a mortal danger?

Thanks so much for taking the time to reply; I'm a bit fearful to use it without knowing more.

Kile Rocha says:
I just read about the recall so I will not let my daughter cook with this until I get the replacement top. It is a voluntary recall and they will send you a new top. Company phone is 718-492-8400

My old Osrow 1000 is missing the adaptor ring and I've read that Osrow is long out of production. Someone in another forum mentioned that CTC machine parts are compatible. Does anyone have an address for a producer of replacement accessories for CTC or other similar pasta machines?
