Help Please...Balloon Construction Sound Proof Dilemma

Own an early 1900's Sears and Roebuck "balloon constructed" home. Just learned this may be the cause for the nearly insane noise level emitted from basic footfalls, dropping any type of items on floors, upstairs doors rattle when downstairs doors close. All noise on mid-level travels up through side walls and floors, downstairs to up still noisy but less apparent. We were under-informed when re-doing drywall, or could have "double-studded" as I understand it. Only option left is to carpet over simply stunning floors. Even if choosing this option, not sure which type of padding would be most effective. Would anyone possibly have some suggestions? My great thanks in advance for your feedback.
