why does my kindle not do that cool page turn animation?

If you're sure your friend wasn't showing off a magazine, I would be interested in what book it was.

ETA: Maybe I should specify what I mean by paper vs app. National Geographic is an example of paper. On my old Fire, there was a choice of page vs text view. On the 8.9, there isn't that option, but when you tap the list icon, it goes to an active TOC that scrolls vertically. In normal view, you can view one page when in portrait or two-page spread in landscape. The original page layout shows, including ads. The ONLY option under Aa is Page Curl On/Off.

National Review works like an app. There is a vertical-scrolling TOC, but the pages are a text presentation without any ads...and you can adjust many things under the Aa key, but not curl.

Could it be different for books and magazines? Or maybe even dependent on the file type -- azw/azw3?

The Nook HD+ has page turn animation for magazines, but not for books (or at least not for any books I've looked at).

There is not a way to do this one the kindle fire, if that's the kindle you're talking about. An eink kindle wouldn't have the graphics technology to begin with.

It is not likely to happen. Apple now has a patent on the page-turn animation.
