I just received a Kindle Fire HD for Christmas and had a KK. What is the simplest way to transfer books off of my KK to the new Fire?

Register your Fire to the same account as the KK. The books belong to the account not the Kindle. Once registered, you simply download the books from the account to the new Kindle.

Do I have to de-register my KK? Would like to keep KK to have on standby.

No, Curly, you don't have to deregister your KK. You can have multiple kindle devices and apps all registered to the same account at the same time. You can even read the same book at the same time on BOTH devices - it is one of the lovely things about kindle books. :-)
