I still do not remember the date two Fridays ago but I will always remember the day. I had chosen today simply because it is the big 5-0 for Loren (Kenneth's little brother). I had planned on doing a start a couple of months late on the 50th anniversary of the first American's - Jim Whittaker - climb and conquest of Mt Everest. Maybe next week. I am in too much of a ponder mood.

I have had a lot to think about the last 13 days.

Life has a habit of taking us on a roller coaster ride full of highs and lows and twists and turns. Even for those who enjoy unexpected thrills, it's frightening to suddenly find themselves heading for a deep plunge. Some people's roller coasters are more sedate than others but we all are on one. We all have fears.

It can happen at any age but especially as we grow older, we are fearful of health concerns for ourselves or that of a loved one. Fearful of not having enough money to make ends meet. Fear of loss. Fear of losing a job, or finding one or beginning one. Whatever our fears are, they are valid, and we do not need to feel ashamed or embarrassed that we are, at times, afraid.

It may be comforting to know that everyone gets scared, and it is perfectly OK. Sometimes just acknowledging our fears is enough to make us feel better. And while it sometimes takes a lot more to ease our mind, we can console ourselves with the knowledge that life can be scary at times. Giving ourselves permission to be scared lets us move through our fears so we can let it go. It also makes it alright to share our fears with others. Sharing our apprehensions with other people can make our fears less overwhelming because we are not letting them grow inside of us as pent up emotions. Sharing our fears also can lighten our burden because we are not carrying our worries all by ourselves.

I gotta say that sharing comes hard to me but it is the only thing that has gotten me through the past few days.

Chocolate Decadence

Top make one cake, you'll need...

Equipment:
Large sauce pan
Wire whisk
10 inch cake pan
Parchment paper

Ingredients:
1 pound of butter
1 cup sugar
1 cup coffee (brewed)
1 pound semi-sweet chocolate (chopped up)
8 whole eggs

Preheat the oven to 325F. Line the cake pan with parchment paper and grease.

Place the first three ingredients into the saucepan and bring to a boil. Remove from heat. Add the chocolate and stir with the whisk until all the chocolate is melted. Add the eggs and whisk to incorporate. Pour into the greased cake pan and bake for approximately 25-35 minutes. To test cake for doneness, the cake will be very wobbly but if touched it will not stick to your finger.

Let it chill and and then serve with some fresh whipped cream. If you're feeling really exciting, top it off with chocolate sauce and shaved chocolate pieces. mmmmmm.

Mmmm, I hope your Sweet Spot is memorable today red. I emailed about the option that isn't available for you and the response that came back was that was a matter of your settings. I checked my settings and couldn't see it, but maybe you can check yours.
