What Kindle model would work for me?. I'd like something with all the bells and whistles. An unlocked version.

read the product pages for each kindle and see which one would suit you the best

There is no such thing as an "unlocked" version. The Kindles that have cell phone access (not wifi only), are tied to AT&T and that cannot be changed. Please do read up on the cell phone restrictions for the countries you listed prior to purchasing, if you are looking for 3G/4G access.

It sounds to me that you are looking for one of the Fires ("something with all the bells and whistles"). Just remember that many of the Fire's features will NOT work in Australia and Greece - as in streaming videos, downloading apps from Amazon, etc.

I suggest checking out this thread - It is for people based in Australia and they will be able to tell you what work arounds work "down under".

Any of the e-ink Kindles (Basic, Paperwhite or Keyboard) will work fine. Of the current models, only the Keyboard has audio support. The Paperwhite is Amazon's newest, and arguably its best, e-reader. Navigation and page turns are through a capacitive touch screen which also features an innovative system for lighting the display.

The Basic and Keyboard models use physical page turn buttons and a manual 5-way controller for navigation. The one you buy depends on personal preferences.

If you don't have convenient wi-fi access, you may want to consider a 3G model. Both Greece and Australia have 3G coverage in some areas. Check the map here:

Stay away from all of the Fire models. They aren't supported by Amazon in either country and won't be able to access Amazon videos or apps.
