World Health Day 2013, to be observed on 7th April 2013, focuses on a silent killer - hypertension or high blood pressure, which is a common lifestyle-related problem of the modern world. Hypertension affects nearly one in three adults worldwide. However, since it does not always cause obvious symptoms, it often goes unnoticed. Ironically, detecting hypertension only needs a blood pressure apparatus, which is available at every doctor's office, and 5 minutes of time.

Why is it necessary to control blood pressure? Prolonged uncontrolled hypertension can affect vital organs - it affects the heart resulting in heart attacks, irregularities in heart beat and heart failure. It affects the brain by causing strokes. It damages kidneys, resulting in kidney failure. Besides, it can also cause blindness. The chances of developing complications are worse in the presence of conditions like diabetes, another common public health problem.

Hypertension contributes to nearly 9 million deaths every year. A substantial number of these deaths can be easily avoided through early detection, adopting simple preventive measures and keeping the blood pressure under control with regular medications. An annual check-up can easily detect if the patient has hypertension. Treatment usually involves daily medications, which may have to be taken for a lifetime under the careful guidance of a medical practitioner.

Simple measures that could help to prevent this deadly disease are:

* Cut down on salt intake. Salt is known to increase blood pressure
* Include a regular walk or other physical activity in your daily routine
* Eat a balanced diet with plenty of fresh fruits and vegetables and avoid excessive fats
* Avoid smoking and alcohol intake
* Control your weight
* And finally, reduce your stress and don't forget to relax when possible.

Along with making changes in your lifestyle like quitting smoking, exercising etc, adopt a healthy dietary habit as well. In the reading room, we have some nutritious foods that will help lower your blood pressure:

Bananas are packed with nutrients with relatively high content of potassium. Potassium is known to lower blood pressure and reduce the risk of stroke. Banana is also low in sodium which makes it a superfood for those with high BP.

Fish has low fat and high protein content and is a good source of omega-3 fatty acids. Studies have shown that Omega-3 fatty acids reduce inflammation and prevent high blood pressure. Fish like tuna, halibut, cod and salmon are highly recommended. We have sushi and grilled salmon.

Green leafy vegetables are filled with antioxidants, folate, potassium, and magnesium which together aid in lowering and maintaining blood pressure levels. Have them raw or steamed to retain the health giving properties.

Tomato and tomato products contain the antioxidant lycopene, which studies have shown that it helps in reducing high blood pressure and the risk of heart disease. Calcium, potassium, vitamins A, C and E are some of the important nutrients found in them. Check out our salad bar.

Herbs and spices have always been used for their healing effects in traditional medicines. Not only do they have low calorie content, they are rich storehouses of antioxidants. They are excellent for maintaining a healthy heart and blood pressure.

Legumes which include beans, pea and lentils are rich in protein, magnesium and potassium with low glycemic index. A study shows that they are beneficial for diabetic patients as they lower blood glucose levels, heart rate and heart disease risk through a reduction in blood pressure. Try our lentil soup made with healthy spices.

Studies have proven that calcium keeps the muscles that line blood vessels toned and help lower blood pressure. Consume low-fat milk, yoghurt and cheese which are excellent sources of calcium along with sufficient amount of vitamin D for metabolism and absorption of calcium.

Whole grains contain a healthy dose of potassium, magnesium and folate, which altogether help reduce high blood pressure. Replace pasta, white bread and rice with oatmeal, brown rice, millet, etc.

Apart from protein, fibre, omega-3 fatty acids and vitamins, raw nuts contain high amount of minerals like magnesium and potassium, which help to reduce blood pressure. They also make an excellent choice for a quick snack as they make you feel full without piling on the pounds. Hmm...coat them in the next superfood and enjoy.

Modest consumption of dark chocolate is favourable as it contains flavonoid which is known to affect the production of nitric acid, which in turn relaxes the muscles and causes the blood vessels to dilate resulting in lower blood pressure. This recipe has whole grain (oats & whole grain flour), bananas, dairy and chocolate chips.

INGREDIENTS:
1 1/2 cups whole wheat flour
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup dark Ghirardelli chocolate chips
2 large eggs
1/2 cup unsweetened applesauce
1/4 cup skim milk
1 cup mashed banana
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
2. Stir whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips together in a bowl. Make a well in the center. Whisk eggs in a separate bowl until frothy; mix applesauce, skim milk, and banana into eggs. Pour moist ingredients into well made in dry ingredients; stir just to moisten. Batter will be lumpy. Fill prepared muffin cups about 3/4 full.
3. Bake in the preheated oven until a toothpick inserted into the center of several muffins comes out clean, 16 to 18 minutes. Cool in pan for 5 minutes before removing to finish cooling on wire racks.

VEGAN OVEN-FRIED GREEN TOMATOES

1/2 cup water
1 1/2 teaspoon ground flax seed
1/2 cup cornmeal
1/4 cup quinoa flour (or other flour)
1 teaspoon cornstarch (or other starch)
1/2 teaspoon black pepper freshly ground
1/2 teaspoon salt
4 large green tomatoes

Preheat oven to 425. Spray a baking sheet lightly with canola oil or non-stick spray.

Combine the water and ground flax seeds in a blender and blend at high speed for 30 seconds. Pour into a wide bowl and allow to sit for a few minutes to thicken slightly.

In another wide bowl, combine remaining ingredients (except tomatoes). Cut tomatoes into slices about 1/4 to 1/2-inch thick. Submerge a tomato slice in the flax-water, allow excess to drip off, and place slice into cornmeal mixture. Press lightly to assure that bottom of slice is covered with cornmeal and turn to coat other side. Place on prepared baking sheet.

When all tomato slices are coated, bake for 15 minutes, or until bottoms are golden brown. Turn and bake another 15 minutes to brown other side. Remove from oven and serve immediately.

Ingredients
2 tablespoons olive oil
1 chopped onion
2 cloves garlic, sliced
1/4 teaspoon red pepper flakes
Salt and freshly ground black pepper
2 cups kale, washed, stems trimmed and chopped
1 (15- ounce) can cannellini beans, drained
3/4 cup chicken stock (substitute vegetable stock to make this Vegetarian/Vegan)

Directions
Heat olive oil over medium heat in a large Dutch oven.

Add onion and garlic slices. Saute until tender about 3 minutes. Add the red pepper flakes and salt and pepper; stir until fragrant. Add the kale and let saute until it cooks down slightly. Add the beans and the chicken stock.

Cover and let cook for 10 minutes.

Mum's Everyday Red Lentils (Vegan, Gluten-free)

Ingredients
Lentils (Dal):
1 cup masoor dal red lentils, picked through for stones
2 cups water
1 onion, diced
4 cloves garlic, thinly sliced
1 (1/2-inch) piece ginger, peeled and minced
2 medium tomatoes, diced
1 serrano chile, sliced in 1/2, optional

Tempering oil (bagaar):
1/2 teaspoon cumin seeds
1/2 teaspoon black mustard seeds
Generous 1/2 teaspoon turmeric powder
1/2 teaspoon paprika or bafaat powder
1 tablespoon vegetable oil
Handful chopped fresh cilantro leaves
Directions
Put the lentils in a strainer and rinse them under running water. Add them to a bowl, cover with water and let soak for 30 minutes. Drain and set aside.

In a medium saucepan, combine 2 cups of water, the onions, garlic, ginger, tomatoes, chile, if using, and the lentils. Bring to a boil over medium-high heat. Skim any scum from the surface. DO NOT ADD SALT YET; it will toughen the lentils, thereby lengthening their cooking time. Lower the heat, cover the pot with a lid and gently simmer until the lentils are tender, almost translucent, and almost falling apart, about 30 to 40 minutes.

Whisk the lentils, releasing its natural starch, and mash some them so the mixture becomes thick. Add salt, to taste.

Tempering oil (bagaar): In a small bowl, combine the cumin and mustard seeds. In another bowl, combine the spice powders. Have all the ingredients ready because this will move very fast!

In a small skillet, over a medium-high flame, warm 1 tablespoon vegetable oil. Once the oil is shimmering, add seeds and immediately cover so you don't get covered in spluttering oil and seeds! Add the spices. They should sizzle and bubble a little - that's the blooming and it's exactly what you want. Don't let them burn. The mixture should bloom for about 30 seconds, no more.

Pour the oil mixture into the lentils, standing back so you don't get hurt when the mixture splutters again. Stir to combine. Transfer the lentils to a serving dish and garnish with cilantro.

Maple-Glazed Salmon with Pineapple Salsa

Ingredients
4 (6-ounce) salmon fillets

Marinade:

1 tablespoon maple syrup
1 tablespoon teriyaki sauce
1 tablespoon pineapple juice
1 teaspoon minced fresh ginger
1 clove garlic, mashed

Pineapple Salsa, Directions

Place salmon filets in a zip-lock plastic bag. Combine marinade ingredients in a non-reactive bowl or measuring cup. Pour marinade over filets and refrigerate from 1 to 24 hours.

In a grill basket sprayed with cooking spray, grill the salmon, skin side down, over hot coals. Flip after 2 to 3 minutes and cook for another 1 to 3 minutes, or until desired doneness. Serve with pineapple salsa spooned on the side.

Pineapple Salsa:
1 medium size ripe tomato, chopped into small cubes

1/4 cup chopped red bell pepper

2 pickled jalapeno pepper slices, deseeded and finely chopped

1/2 cup pineapple chucks, fresh or canned

1 teaspoon salt

1 tablespoon sugar

Place all ingredients in a small, non-reactive saucepan. Simmer over low heat for about 5 minutes. Cool. Refrigerate until ready to serve with the salmon.

Just thought I'd mention that several years ago a dietitian told me that the potassium is mainly in those pesky strings that run along the banana and so if you were on a potassium-restricted diet (some people like me have to restrict their potassium intake because of other medication), just remove the strings before eating. Sounds weird, but that's what she told me and I still do.

Great. I love it. If one can find a way to naturally control their HBP, it's great. Major issue with high blood pressure? Issues related to non compliance with medications (because of side effects!) But don't go stopping your BP meds all at once without talking to Dr. ---> Rebound HBP... Oh fun stuffs!

I just did some research on the banana string thing. It turns out that the highest concentration of potassium is in the interior meat of the fruit. Exterior meat is not far behind. The peel actually has a lot too, about 75% of the concentration of the fruit.

An Aneurysm can also be caused by High Blood Pressure and is fatal more times than it is not...
I was told the 1/3 of all people that have one die right then and then another 1/3 don't make it to the hospital.
And yes, that does make me feel just a little bit special.
