Because the Fire has a backlit screen, like a laptop or cell phone. Light shines up through the screen. The sun is much brighter than the light shining through the screen. When you are in the sunlight it sort of cancels out the light of the screen.

It's like when you look out a window at night. With the lights on in the room you can't see out because the light in the room is brighter than the light coming in the window from the outside. If you turn off the light in the room you can see out the window.
