Can you trade in an old kindle for a new one?

Depending on the Kindle, you will likely get more selling yourself directly on eBay or Amazon, but the process works fine. I traded my first generation Kindle Fire using this link:

You pay what ever the new Kindle cost. You can possibly sell your old one back to Amazon and use the funds to help pay your bill for the new one.

If I want to sell my kindle touch I only had for a year and wanted a kindle fire hd...could I trade and pay with the gift card

Yes. You'd have to subsidize the gift card amount, though. That won't be nearly enough. As has already been mentioned here, you'd get much more selling your Touch yourself than trading it for a gift card.

No, you need to delete them (the easiest way is to reset it to factory settings), as it is against the terms of service to transfer them with the Kindle.
