Grandpa and Grandchild have shared an account for many years. Grandpa would now like to have his own account. Is there any way to set up the new account and move one person's books to the new account, leaving the other person's books behind?

Nope, unfortunately all those purchases will stay with that account. Grandpa can still set up his own account, keep his favorite books on his Kindle, deregister his Kindle from the shared account, and register it to the new account. Those books will stay on his Kindle but if he accidentally deletes a book, he would have to unregister his Kindle and reregister it to the old account to download it again.

No. The books (actually the license to read the books) belong to the Amazon account, and is non-transferable to another account.

No, Amazon won't split or merge accounts. That would get into the licensing laws for the books, which are non-transferable.
