Fox, some advice: of course, put the turkey in the fryer and fill it with water, then remove the turkey and mark your line for the oil fill. But, don't fill the fryer all the way to that line because when you submerge the turkey, the oil is bubbling and rises about an inch most times. If you fill it to the line, make sure you have plenty of depth to accomodate the bubbling oil.
