I would love AI to go in a more humanistic, realistic direction. Non-playable characters, as well. It would add a whole new element of story telling to video games.

Properly implemented gameplay elements that let the player end a map or stage with different approaches. Right now, it's just easier to go guns n blaze on everything, and less frustrating too.
