Well, 16GB is roughly 4,000 songs, depending on quality. Most movies on DVD are about 2GB and less. Apps vary, some are just a few MB and some of the Gameloft titles are about 2GB.

A movie is about 700mb (movie only, SD) and an album is lets say 70mb roughly so ~15gb usable space you've got room for 21 movies, over 200 full length albums, or a whole mess of apps and pictures.

Apps aren't 2gbs for the most part. I have tons of games and such on my iPad and they don't take up a fraction of the space available.

Honestly, the vast majority are not that large. I only encounter apps that big when playing Gameloft games or something like those. Most apps I see are very small file sizes.

You're previous numbers were right. Video only is going to be smaller than a download that might have menus, special features, languages, and all of that. If you're working with a DVD ripper or something like that you can get the 600-700mb size.

Well looking at the apps on my phone, another android device here are the largest and smallest apps.

Largest: Plants Vs Zombies 74.47 MB
Smallest: Stocks 1.77 MB

Most are under 10MB and almost everything is under 20.

EDIT: Other game sizes since games tend to be the largest apps
Angry Birds Space: 28.27MB
Another World: 16.88MB
Canabalt HD: 12.75MB
Osmos HD: 32.38MB
Scamble: 20.66MB
World of Goo: 50.91MB
