Saint Hildegard lived in the 12th century. She was an abbess, a mystic, and eventually, a saint. Among the considerable writings she left are her thoughts and opinions on the spiritual as well as physical values of various foodstuffs. This rather unusual cookbook derives its recipes from these theological and visionary musings, although a few are directly from the saint herself. This is not a meat and potatoes diet at all, but surprisingly well-balanced, considering the limitations of medieval fare. There is an emphasis on greens and grains, especially that health food junkie's delight, spelt, a decidedly acquired taste. Dishes vary from the simple, using only a few ingredients to the much more complicated, requiring a very well stocked pantry. A few ingredients will be unfamiliar to most 21st century cooks in the Midwest. I doubt that many folks regularly cook with nettles, something we generally consider a weed these days, but St. Hildegard makes a omelet of them,praising their purgative, restorative, and stimulative virtues. While this slim volume may prove more for reading, than cooking, Chicken Cooked in Wine for the Heart and the Tunisian Ratatouille are quite delicious.

coconut soup, tomatoes and potatoes? in a book which allegedly features the recipes of a german mystic who dies before 1200 A.D.?

The recipes sound nice enough!
but this is NOT hildegardis stuff.
So, since that is waht I was looking for it was an epic fail even before I found teh chocolate cookies.
So this one WILL be returned, because, it is simply false advertisement

This is a thorougly delightful book. If you are tired of Big Food telling you what to eat, how much and when to eat, and what it should taste like, this is a great book to use for recipies for some real differences - and the best part is, most of it is done with spices/herbs. Simple recipes. If you are tired of Big Pharma telling you how to feel and how to achieve well-being over-the-counter, then this is a great book for making some subtle changes which are actually helpful. It is very readable, simple and entertaining. Excellent book - I liked it so much I gave my copy to my sister-in-law and ordered another for myself.

This review is for the book: "From Saint Hildegard's Kitchen - Foods for Health, Foods for Joy" - This is such a lovely book. It raises my spirit just to read it, not to mention experimenting with the recipes. It is a translated and updated cookbook of German writer, composer, philosopher, Christian mystic, Benedictine abbess, visionary, Hildegard of Bingen, and her writings on food and health, based on and adapted from her 12th century volumes, Physica I and Physica II, on healing plants and foods. Author, researcher, chef and lay oblate of Saint Benedict, Jany Fournier-Rosset, notes in the introduction that “the recipes have been tested and are comprised solely of those foods, spices and herbs which possess the virtues of greenness, lightness and digestibility (the “foods of joy”) that Hildegard preferred for their subtle values.”

Care is taken to define various cooking terms and basic ingredients used by Hildegard, including how and where to find ingredients not readily familiar to 21st century readers and chefs. A 20 page summary identifies and explains the various herbs and condiments Hildegard thought essential for excellent digestion (cinnamon, cumin, galingale, cloves, angelica, anise, dandelion, etc.). Twelve pages are devoted to the identification of elixirs and tonics and the imbalances they address (lavender, violet and revitalizing elixirs, lemon balm soothers, winter restorative, warming tonic, etc.), as well as wines (lemon-flavored wine, curly mint, lavender and peach wines) and coffee and herbal teas.

I bought the book to get ideas about spelt bread making and different ways of cooking. The recipes are not very clear and have mistakes in referring to wrong pages. The person using this book must have some skill and experience. The bread that I made was not vey successful but I will try again.

Excellent, updated recipe book with recipes from a unique medieval nun who was way ahead of her time. Hildegard von Bingen was recently declared "Doctor of the Church" by Pope Benedict XVI.
She was not only a holy lady, but also wrote music, staged the earliest morality plays, was interested in natural medicine, an advanced science brought back from the cruisaders to Europe who was way behind in that field. I hope the book will inspire more people to learn about this great saint in the Catholic Church.
