"Chattman is not only a seasoned cookbook author, but also an inventive cook who's not afraid to try unusual flavor combinations or new techniques. Chattman developed five general strategies to tackle the challenge of 30-minute desserts. First is downsizing. Smaller quantities mean shorter preparation and cooking times. The small quantities have an added advantage of keeping sweet indulgences on a modest level. Her second strategy was to turn up the heat on many dishes. She figured out the hottest temperature for any dish to bake as fast as possible. That means her biscuit cobbler bakes at 450 degrees for 15 minutes. Chattman's third trick comes from professional pastry chefs. Use an ice bath or the freezer to quickly cool ingredients, like the tapioca and mango parfaits. The fourth strategy is "to think outside the oven" for ways to cook desserts that are traditionally baked, simply because the oven often takes too long for an "express" dessert. Chattman's final strategy is to use quality convenient products to give her a head start. She avoids store-bought pie crusts and nondairy toppings because she doesn't like the results. But she uses graham crackers as a base for chocolate marshmallow cookies, tortillas in warm cinnamon crisps and frozen pizza dough in an apple pizza. Of course, making dessert on a busy weeknight practically forces cooks to get organized. One hundred from-scratch desserts which can be put together in a half hour or less come from a busy mother and former pastry chef and offers a wide range of dishes, from cookies and puddings to ice cream. Shortcuts to extra-swift production range from using frozen pizza dough to make pie crusts to 'baking' cookies in a waffle iron. The tips and insights are wonderful for busy cooks who still wish to cook from scratch and make for an outstanding guide libraries will find a popular pick.

This book came right on time, as they usually do. If you like quick little desserts that are easy to put together... this is the book for you. I found that just about anything you want to make in this book will require ingredients that you will probably have hanging around in your pantry any way. Great for entertaining! Good book at a good price. I would say that this is not just for entertaining. If you are a working mom and like the idea of putting dessert on the family dinner table, these are so easy to do, that even the kids can help out and you will all have dessert in a flash!

I'm a cookbook writer but I don't write too many dessert recipes. Normally because they take A BUNCH of time. This book proves me so wrong. I am now able to write my own .. It's excited and fun.. and easy and this book is a must if you need to make some quick deserts..
