Format: Paperback
Clear instructions, with drawings, on how to clean and prep squid, as well as tips on how to select for quality. Most seafaring peoples have ways of cooking with squid, hence the "International" in the title. My favorite was Calamares Rellenos con Jamon, or Squid Stuffed with Smoked Ham, which was quite simple and very good. Some good squid literary and historical tidbits are included, which might help to win over reluctant young gourmands.
