More than 65 delicious recipes, inspired by world travels and more than 24 years in her kitchen, highlights a delicious, healthful way of preparing vegetarian and vegan recipes without sacrificing flavor or satisfaction. More than 50 of the recipes are naturally gluten-free with many more gluten-free optional, and over 48 recipes are dairy-free or easily dairy-free optional, and all of the recipes are written without refined sugar, refined grains or other processed ingredients.

Anna grew up in the countryside near New Prague, Minnesota eating simple, beautiful food that her mom cooked from a garden that her parents grew in their backyard. Eating seasonal, whole foods as a kid was just a way of living. Her first food memory is sitting under a big maple tree as a little girl eating a heaping bowl of fresh raspberries that she picked, covered in fresh cream out of a teal Fiestaware bowl. She was completely transported by the beauty of that moment. Now, she loves to cook and eat and share her passion for creating delicious, satisfying food. She wants to show how with a few skills, some good recipes and simple plans for cooking simply and affordably, eating can be an enjoyable and nourishing experience. A cookbook is a way for Anna to share her practical ideas about loving ourselves and those around us. She hopes to inspire and encourage people to create nutritious meals that feel good to prepare and serve to family and friends.

Let me start off with a disclaimer - I know Anna. I have volunteered in her cooking classes in Minneapolis for a couple of years. That said, there is a reason I keep working her classes...the food is spectacular! If you grow a garden, shop at a farmer's market or co-op, or participate in community supported agriculture (CSA) this book (and what is to be a series!) is for you. If you don't do any of these things, but want to know how to eat better, this book is DEFINITELY for you! The recipes are clear and concise and won't send you running around to specialty shops trying to find the next big thing. As well, there are no fancy cooking skills required to execute these recipes (although having some good knife skills will come in handy).

I think it's important to eat local and pay attention to what we consume. We're not vegetarians but make a point to eat at least one meatless meal per week. I can assure you that this book isn't trying to replace meat on your plate - it isn't full of tempeh, seitan, and whatnot - it's real food that satisfies without leaving you wonder, "Where's the beef?" (And, if need be, there's no shame in slicing up some chicken to add to a plate.)

My better half is a big guy, yet after eating one of Anna's meals he isn't digging around in the fridge a half hour later looking for a snack. Our favourite dish is the Wholewheat Pasta with Winter Squash and Kale...we must eat a variation of this meal at least three times a month. (And my coworkers always comment on how good it looks when I bring it for lunch the next day!) The ultimate test will be when I cook these recipes for my staunch midwestern inlaws - there's no bacon or Tater Tot hotdish to be found in this book! :)

Don't take my word for it, do your belly a favour and make the Winter Squash Risotto (offered in the free preview) and decide for yourself! Happy eating!

If you've always wanted to learn how to cook healthy, flavorful, and savory dishes - this is the cookbook to buy. Anna's step by step directions are easy to follow and every dish I've made thus far has gotten two thumbs up from everyone in my family. We're eating so much better using this book as a guide! For $9.99 you cannot go wrong. If you buy it, be sure to try the Wild Rice, Kale and Sweet Potato Casserole. It's our favorite thus far!

This book is perfection! Anna's writing exudes her warmth and passion for healthy cooking in a way that excites the definitely want a piece of this!

As someone who is committed to avoiding processed foods and doesn't love to spend time in the kitchen, I love the ease of this book being seasonal and mostly gluten free. Is just so refreshing to open a book and know I don't have to comb through tons of recipes and make modifications.

My favorite recipes so far are the roasted root vegetable salad and mountain cookies. I can't wait for the spring edition!

Let me just say I love to cook but am bad at following recipes, I am better at creating my own, at least I thought. I purchased this a couple of weeks ago, I have celiac, and multiple food allergies, also have been working at vegetarian eating. I only want to put good food on the table for my famimly. Let me say that someone mentioned the granola being a gateway drug, they weren't lying, it is amazing, makes a HUGE batch and I feel good about eating it (especially since I can use maple syrup that is made by my own brother in law!). The Indian Curry with Yellow Split Peas, Squash and Basil is fantastic, and full of so many nutrients. My runner daughter loved the Wild Rice, Kale and Sweet Potato casserole. And as simple as it is the salad in a bowl is now a staple on our dinner table no matter what we are having for supper. This book is more than worth the low cost!

I have had the pleasure of taking a cooking class and attending a women's retreat hosted by the Author of this book. Anna's food is amazingly delicious and nutritious. I have recently started an anti-Inflammatory diet plan (The TQI Diet - To Quiet Your Inflammation by Kathy Abascal) and I find Anna's recipes to be perfect and very easy to adjust if I need to. I am looking forward to making most of the recipes in this book and will anxiously await her future seasonal publications. Anna has a passion for helping others learn how to eat to improve their health and lives. I am thankful she is publishing her "passion" to share with everyone! If you are looking to learn how to cook with real whole foods that taste wonderful, don't hesitate to purchase this book.
