Product Description

Amazon.com Review

Victorinox's long 10-1/4-inch serrated Super Slicer with a round tip lives up to its name by slicing everything from bread to roast meats to tomatoes. Because the blade is stamped rather than forged the price is kept reasonable, yet the high-carbon, stainless steel is extremely durable and the ground, tempered edge maintains its razor-sharpness for a considerable length of time. The molded Fibrox handle provides a sure grip, has no grooves or rivets to harbor bacteria, and is dishwasher-safe. All in all, this is a lightweight and very utilitarian knife.

Started in 1884 in Switzerland, Victorinox is perhaps best known as the manufacturer of the Original Swiss Army Knife. Today Victorinox by R.H. Forschner makes everyday cutlery for the home as well as professional forged cutlery and multi-purpose tools. Included with this knife is a plastic BladeSafe protector that snaps securely in place over the blade, protecting not only the knife blade from nicks when it's stored in a drawer but hands that reach in. Hand-finished in Switzerland, the Super Slicer (model 87547) is covered with a lifetime warranty against defects. --Ann Bieri

Product Description

In 1884 Master Cutler Karl Elsner started his cutlery factory in Ibach, Switzerland and in 1897 he crafted the Victorinox Original Swiss Army Knife. Since that time the Elsner family has continued to craft tools of percision, durability and quality. Victorinox is one of the largest producers of cutlery in the world. Victorinox cutlery has been distributed in the United States since 1884 to culinary professionals under the brand name R.H. Forschner. Each blade is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.

5.0 out of 5 stars Superior slicer edge, September 3, 2005
Two years ago I bought this exact Victorinox blade, only it's fitted with a nice looking wood handle and a hefty pricetag, especially for a stamped blade.
I instantly noticed that this edge was superior in every way to anything I've used in the past for slicing bread and pastry: very quick, effective, less crumble prone slicing. Soon I also found this is really a great knife to use for almost anything except chopping, or carving meat when perfectly smooth slices are preferred.
Because the knife is quite lightweight and the tip is round, it never feels big in an intimidating way; rather it's just very easy to handle, and very effective for slicing anything of any size, big or small. Lettuce is one stroke per slice: the whole thing dealt with in seconds and ready for shower.

After all the use mine has had so far, it still performs like new, and that's with no honing whatsoever. Can't really do that with reverse scallops anyway, and I don't think it will need any pro touch up for a long time.
The triple-riveted wood handle and almost full tang is also holding up perfectly: absolutely no quality issues.

My best guess is that forged or stamped blade likely makes little difference for this particular type of knife, or more specifically this type of edge. If anything, I'd expect that some will welcome the lower weight of a stamped 10" blade. Just to be clear, I don't think a stamped 10" chef's knife would seem like a terribly good idea for a kitchen tool, but this type of slicer certainly handles differently and I doubt that many will find added heft desirable; maybe not even were it available at a similar price point.
That said, I'll be happy to give this one to my mother if I indulge myself with the forged Wüsthof Classic super slicer. That's just me, I like the red Trident logo. Actually, she needs a good bread knife just like everybody else, and if it's not reverse scallops, then it's not a bread knife, not in my spoiled opinion.

The price/usage ratio of a kife like this is probably hard to come by with any item inside or outside the kitchen. As long as it's got the edge, get any super slicer you fancy, and don't let anyone tell you that a 10" knife is overkill or impractical for home use, because it just isn't necessarily so. Unlike a 10" chef's knife, there's hardly a learning curve with this one, and the generous length allows for greater [range of] productivity.

I love this knife. It's called super slicer for a reason--it cuts everything! Perfect for tomatoes and hard bread.

5.0 out of 5 stars I love this knife!, July 13, 2007
I have had this same knife for about 3-4 years now & abused it through culinary school & working at a high end kitchen & it still cuts like new.

I bought another one for my Dad because he hasn't had a decent knife in years & I knew he needed something very low maintenance. This knife is perfect & he can even put it in the dishwasher (which is highly discouraged by me).

This is a really versatile knife as well & can be used for it's traditional use of slicing bread, but if you want perfect tomato slices-this is your knife! Cutting almost every kind of fruit or veggies is ideal with this knife.

I would absolutely recommend this knife to anyone, professional or not!
