This 296 page vegan slow cooker cookbook is well organized and has a wide variety of recipes for different tastes on the vegan spectrum. Besides the usual recipes you expect to find in a slow cooker cookbook like chili and stews, there are appetizers, condiments, desserts, bread and breakfast and hot drinks. Vegetable pate, spiced peans and cashews, and chex mix are a few of the appetizers that I never realized could be made in a slow cooker. Chapter 7 is called "Simply Stuffed" and it is about how well stuffed vegetables can be prepared in the slow cooker, not only stuffed peppers but stuffed zucchini, eggplant, cabbage and artichokes as well. Condiments to be made in the slow cooker include ketchup, chutneys, and apple butter. All can be stored in the refrigerator for up to 2 weeks afterwards. The dessert and breakfast sections include cakes, cobblers, frittatas and breakfast breads. I never knew you could do so many things in a slow cooker till I read this book. I'm anxious to try out many of the recipes and that is why I read cookbooks, to discover new recipes that look good.
