Finely ground, no skin, perfect for pastry,

I've just received my order and set about making a batch of french meringue macarons (not macaroons...those are a coconut cookie, macarons are different beasts.) Anyone who has ever attempted macarons knows that they are a fiddly, persnickety pastry on the best of days. However, this almond flour performed significantly better than the other brands I've tried, and is considerably easier than trying to grind your own. The macarons didn't come out perfect, but that was my fault for overworking the batter, because I'm more accustomed to a coarser grind. I subsequently used some to make mexican wedding cookies, which turned out perfectly. Tomorrow I'm using it to make marzipan for petit fours, and I'm sure it will perform brilliantly.
This flour blends well, sifts beautifully, hydrates easily, and delivers a lovely natural almond palate free of aftertaste or grit. I will confidently use this product above other brands for pastry from this point forward.
