2.0 out of 5 stars Recipes are quick but bland, August 25, 2012

This review is from: Everyday Happy Herbivore: Over 175 Quick-and-Easy Fat-Free and Low-Fat Vegan Recipes (Paperback)
I don't like to give negative reviews, but I have wasted so much money on recipes made from this book that I have to. I will admit that everything in here is truly quick. I also liked the intro. Here is a listing of the recipes that I made:
Granola bars - comment from my boyfriend was "tastes vegan". This was unfortunate because I like to show people how great vegan good is. These were really bland and cardboardy.
Dark chocolate pancakes - fine but not great
Spinach scallion pancakes - I liked the idea, but they were again pretty bland so I had to douse them in hot sauce.
Chocolate spice muffins - heavy like little bricks and didn't have the taste to make up for the texture.
Morning glory muffins - totally gross and again, like little bricks
Harvest cornbread - for something with canned pumpkin, this was really dry
Quick burgers - really truly quick, but totally bland
Red red stew - bland but I guess it was ok.
Dijon rice with broccoli - This was just really boring tasting
Quick pumpkin sage pasta - this was fine
butter bean cookies - really gross. I mean, really really bad.
chipotle mayo - this was pretty good
Everyday mushroom gravy - this was bland

I would recommend Robin Robertson's Quick Fix Vegan a hundred times over this book. I don't see anything anywhere about if Lindsay Nixon went to cooking school or ever trained as a chef and I assume she must not have. There is a way to put together a few simple ingredients to make them phenomenal and this woman does not get it. I am throwing this book away before I waste more money on ingredients.

I'm sorry you didn't like the book but I would suggest donating the book to your local library or school rather than wasting it. It also sounds like you might have over mixed and over baked some of the baked goods.

Mrs. Nixon, would you please stop replying to negative comments about your books? It is getting annoying to see you do it almost systematically. Would it not be better to let some people dislike your books in peace, and let the people who do like your books respond to comments?Thank you.
