Frees you from the tyranny of waiting for the seitan to cook.,

I was lucky enough to be a tester for this book and was expecting lots of the same old stews and soups and it was anything but.
Carla is so creative, I love the international inspiration in her recipes.
The things that really stood out for me were:
Curries - green or red, Indian or Thai, she's come up with some fantastic new ways to cook with them.
Cooking dried beans - I've tried and tried to do this the conventional way and it never worked for me.
They were always over or undercooked and I'd given up. Carla's always cook perfectly.
My favorite thing is having a new way of cooking seitan.
I never made it as often as I'd like to because of having to wait around for it to simmer or steam.
It's nice to be able to leave the kitchen for a few hours.
There are "substitution" recipes that you will use often for things like smoked tofu,pomegranate molasses and homemade soy creamer.
Make sure you try the savoury breads and crackers. Excellent as always.
