Actually Tasty Recipes,

I enjoy cooking, but am usually disappointed that the recipes in "diet" cookbooks are too bland or full of artificial sweeteners. (In fact, the addition of the word "diet" in the title of this cookbook almost prevented me from getting it.)
The first part of the book is a nice overview of the importance of proper nutrition for health and weight loss (or maintenance). There is also a 6-week menu plan.
The best part of the book are the recipes and full-color pictures. The ingredient lists are generally small (10-12 items tops) and are things you will probably have in your pantry or fridge. The nutrition facts are clear (calorie counts are included next to the recipe name, as well) and include the details you would need to calculate WW Points+ or diabetic exchanges.
So far, we have tried (and enjoyed):
Blueberry-stuffed French toast (pg 92)
Potato egg bake (pg 98)
Curried chicken rice soup (pg 107)
Little kick jalapeno burgers (pg 136)
Southwest vegetarian bake (pg 148)
Gruyere Mashed potatoes (pg 197) -- and seriously yummy
Frozen fruit cups (pg 237)
Scrambled egg muffins (pg 268)
I recommend this cookbook, as it has tasty recipes with a healthy (or "diet", if you insist) twist. Nothing I made from the cookbook tasted fake or low-calorie. And I appreciate the attention to healthy eating, rather than a get-skinny-quick mentality. Overall, highly recommended.
