I searched and searched for a recipe book on how to make handmade pasta dough. All the books I could find showed you how to cook with homemade pasta and recipes for sauces, etc. This cook book is exactly what I was looking for. It gives you recipes for all almost every pasta you can think of and shows you how to make and cook the pasta dough. It does include some recipes for sauces but the main focus is on making the pasta dough. It includes lots of color pictures and step by step instructions. I am having so much fun with all the pasta ideas, i just had to order more gadgets for making and cutting the different kinds of pasta doughs.

This book does include the use of whole grains (i.e., Whole Wheat, Chestnut, Buckwheat, Rye, Chickpea, Rice). There is also a section on Grinding Whole Grains for Flour. Gluten is discussed (used as a binding agent), but I did not see any Gluten free recipes, but I could be mistaken here as I did not go through the whole book, just looked in the index. Hope this helps....
