I am just begging to try my hand at baking and picked up this book after seeing it discussed on a few blogs. At the moment, I am still digging around in the breakfast section only as I am a little weary of trying cakes too soon - and I have to say, everything I have tried is fantastic and easy. The olive oil bundt was a big hit (made it twice) and the chocolate loaf is already becoming part of my weekend routine. Made the Nutella scones for a friend's brunch and they were the most popular item on the table. I will update the review after I delve into other sections of the book, but right now, I am extremely pleased with this book.

It is the the "Breakfast" chapter, I plan on making it into mini loafs and giving them as gifts. The recipe looks similar to an oatmeal muffin with chocolate chips in it. It could be for breakfast/brunch in place of a muffin or scone, or served as a snack cake, with tea or coffee.
I saw the Chocolate Loaf recipe and it looked good, and having read your review of it, I'll probably being making it soon, any tips?

The first recipe that I tried out of "Baked Explorations" was the chocolate loaf...I'm not usually a "chocolate for breakfast" person, but it's chocolatey without being overwhelmingly sweet, and the peanut butter spread is great on just about everything (including apples). The olive oil bundt cake is on my radar as well.

I baked this cake yesterday. It is easy and delish! It has an unexpected texture. You can feel the density of the oatmeal and once in a while you bite into an un-melted chip. The frosting was sweet but we love sweet. However, the one thing about this is, don't make it for breakfast unless you east breakfast at lunch time. You have to wait for the liquor (I used rum) to soak the chips. And you have to soak the oatmeal and butter for 20 minutes or so. I didn't frost the cake until it had cooled completely, but that is my personal preference. I will definitely be making this again. I bought the book 2 days ago and this is the first recipe I tried.
