This extensively researched book is an easy, comfortable read even if you're nowhere near a kitchen. Eighmey writes like an old friend who just discovered something fascinating she can't wait to tell you about, yet she backs up her stories and recipes with a scholar's meticulous research and attention to details. The recipes sound delicious, and Eighmey has worked extensively to find substitutes for ingredients common to a 19th century kitchen but rare in the 21st.
