Elizabeth Charles' How to Cook For a Diabetic - Incredible Chili, Soup, and Stew Recipes For Diabetics, start with a pleasant surprise. The first section is a well written section on diabetes, starting with "What is Diabetes and ending with Diabetes Resources" that would leave the American Diabetes Association jealous.
There are so many great recipes that I know I will never have the time to try all, and I'm a diabetic. A few that I really like are Three Fruit Soup, Slow Cooker Mediterranean Stew and Vegetarian Black Bean Chili.
One thing that I appreciated was finding the Nutritional Information for each recipe. That is a very important item for us diabetic. I recommend it to all diabetic or anyone who just wants to eat tasty healthy meals.
