This two-piece cutlery set includes the two hardest working knives in Asian cooking. The 3-inch straight-edge paring knife peels fruits and root vegetables for cooking. The 7-inch Japanese santoku knife--a cross between a butcher knife and chef's knife in European cooking--splits, chops, dices, and slices meats, vegetables, and fruit. Like all santokus, this one has a straight edge for precise chopping and also has a hollow edge (with indentations the size of fingerprints running along the edge of the blade) so that foods don't stick to the blade during slicing.

Part of Wusthof's popular Classic line of cutlery, these knives have a very traditional design. Blades are hand forged from high-carbon steel so they retain their sharp edges longer and are easier to resharpen, plus they include a stain-resistant alloy. Blades are also ground and polished by computer to ensure perfect tapering from tip to bolster. A signature feature of Wusthof knives, the weighted bolster gives these knives the perfect heft. For balance, full tangs extend through the synthetic handles and are triple-riveted for strength.

The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands.

The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut).

Types of Blades

The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

Cleaning & Storage

Proper care for long-lasting cooking enjoyment

If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

Wash

For proper storage we recommend the following options:

Product Description

Two basic knives you'll reach for time and time again as you chop, slice, mince and peel. From Wusthof's Classic line, this pair includes a 7-in. Hollow Edge Santoku Knife and a 3-in. Paring Knife. The Santoku, similar to the chef's knife, can be used for slicing onions, cutting melon or mincing herbs; the Paring Knife removes skins from potatoes or apples. The high-carbon stainless steel blades have indentations along the edge that help prevent food from sticking as you slice. Full tangs provide perfect balance. The precision forged knives also come with triple-riveted, high-impact composition handles that fit comfortably in the hand. Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. These Santoku knives have the fantastic Kullenschliff, also called the Granton, edge for extremely finely-honed thin slicing. They slice quickly into whatever width you want, from slivers to less thin pieces, with only a modicum of practice. The sharp flat cutting edge, safely lower than the handle, makes for an easy, comfortable grip. These knives have multiple uses--not just slicing for Asian-style food, nor, for that matter, just for thin slicing. One can chop, dice, or slice safely and quickly with these finely made instruments. I have a large collection of Wusthof knives, but this style is one of my favorites and most frequently used.

I guess I write a lot of enthusiastic reviews, but I generally feel motivated by fine products - and these knives are among them.

I have a set of the Classic knives, but the one I use the most is the santoku chef's knife. I just prefer it to the "normal" chef's knives with the "French curve." So when this set popped up in my Gold Box, I jumped!

They feel sturdy but not heavy in the hand, and the hollows along the edge really do release the food more easily than the straight-edged ones. The paring knife is more cute than anything else. The santoku shape really doesn't add to its functionality, although it is a nice little paring knife.

Keep this set close at-hand, because you'll find yourself reaching for them all the time, as I do.

Great knife set. You can chop just like Rachael does, which is why I bought this knife. My only complaint is that the tip has bent slightly and will break if I attempt to straighten.
