11 New Ways To Make Eggs by Amee LaTour is a fun little cookbook lacto-ovo vegetarians (sorry, vegans) will thoroughly enjoy. The recipes are all quick and easy to make (the author believes breakfast prep should never take longer than 10 minutes - agreed!), and filled with flavor combinations that go way beyond "scrambled eggs." The 11 recipes are:

Asparagus and Sharp Cheddar with Egg

Oregano and Cayenne Eggs

Dad's Western Omelet

Wasabi Ginger Omelet

Greens and Eggs

Artichoke and Jalapeno Omelet

Wow, sounds great! Of the 11 recipes, only two call for meat of any kind (ham), but the author sensitively makes clear that this is a wholly optional ingredient without which the final product is still spectacular. For vegetarians who crave the full experience, there is a "make your own vegan ham" (seitan) recipe in my cookbook I Can't Believe It's Vegan! Volume 4 - All American Comfort Food Truck Stop, Diner and Lunch Counter Classics: Our Top 10 All-Time Favorite Kitchen-Tested, Family-Feeding, Down Home Delicious American

This book is fun! I highly recommend it!

Well, I must admit that the title is one of the biggest reasons that I decided to give this book a try. Glad that I did. Since I LOVE eggs, I did find some things that I can use in this cookbook.
My favorite recipe is Dad's Western Omelet. This recipe reminds me of the one Mama and I made together for Saturday Brunch. Brings back such happy memories and it tastes wonderful. This recipe can be used for dinner and lunch also!

Highly recommend this book!

I picked this short cookbook because I like to see what other cooks are doing with their basic ingredients. This was a great source of ideas for egg recipes. I especially liked the fact that the author stressed including veggies in most of them. Pick this one up, you won't be disappointed!

This is a great little book about eggs. I particularly liked the folksy way the author shared her insights and tips for cooking with eggs. If readers add even 1/2 as many veggies to their eggs as Amee LaTour suggests, they will be a great deal healthier!

Eggs are both cheap AND nutritious, and in some cases, food banks give out a dozen as well. Now there are more choices for how to use them and not feel like you are poor. ;) Thanks for this one being free!
