The book has multiple features that I like. Chief ones are that the recipes call for ingredients normally stocked by cooks who enjoy preparing meals; they can be whipped up in a hurry and microwaved in minutes; and they taste good.
Many of them are prepared and baked in a 16-oz mug. That’s the size of my two-cup Pyrex measuring cup.
To date I have made Quinoa Chile, Crumb Coffeecake, Kale and Barley Soup, Tomato- Couscous- Chickpea Soup, Salmon Chowder, Antipasto Pasta, and Bread Pudding and I’ve had this book less than a month.
I’ve enjoyed each of these dishes. I am recently widowed and this book is helping me to continue to eat wholesome food because it is so easy to “stir it up.”

I am nearly 73 years old and have been cooking since I was a kid. So I tinker with recipes, either before or after I make one for the first time. I say this for the person who complained about the ready-made ingredients. Replace them! Frozen meatballs? Use plain ground beef. Instant potatoes? Guestimate how much mashed potatoes the recipe is trying to achieve and make it from scratch. Don't like beans? There are many recipes in here without them. I'm not attracted to most of the Meatless Mains. Big deal. I don't buy pancake mix, but there is a side note to make your own in this tiny amount, in which, incidentally, I can substitute whole wheat flour if I want. The point is -- these recipes are patterns. I haven't made the meatloaf yet, but after I do, I will use the recipe to shrink down a couple of recipes that I like better.
This book is great! My single school teacher daughter also bought a copy. I intend to get my grand-daughter one for her birthday. And my daughter-in-law points out that she makes lunches only for herself and needs some variety.
