The layout of the book with nutritional info plus the calories of any sides/additions you may want to serve with the recipe makes keeping track of calories (usually something I HAAAAATE) really simple. I've made several recipes, and my picky kids and husband and I have all loved them. Not at all "Mom's Diet Food". My favorite so far is the Guiltless Chicken Salad, And my family went nuts over the Roasted Asparagus and Mushroom Pasta in Lemon Cream Sauce.
I also like the author's take on eating healthy and how they included nutritional information for every recipe I read.
You will find recipes containing nuts or peanuts but most of those recipes can be worked around, if you are allergic to nuts like I am.
Some of the recipes you'll find in their cookbook include:
Coconut-Almond Breakfast Quinoa
Roasted Red Pepper Soup
Greek Chicken Salad Pitas
Artichoke White Bean Dip
Oven-Baked Cinnamon Apple Chips
Pizza Pasta Bake
Slow Cooker Taco Chicken
Grilled Pico Steak
Sweet and Tangy Pork Chops with Peach Salsa
Crispy Baked Fish and Chips
Angel Food Stacks with Lemon Cream and Fresh Berries
Chocolate Crepes with Bananas and Caramel
