Pro-Dynamic Offset Bread/Utility Knife, 7" blade, high carbon steel, plastic handle
Top Customer Reviews
I had a bout of buyer's remorse almost immediately after ordering, cancelled and then eventually re-ordered. The reason for my hesitation was the blade length, which at 7" is on the short side. I have similar knives in the 10-12 inch range. The 9" version of this knife is hard to find, so I eventually pulled the trigger on this 7" version.
Anyway, the afternoon of delivery, I happened to have a few pretty good tasks waiting for it. I had a fresh loaf of crusty bread just out of the oven, and a chicken to carve that evening. It tackled both effortlessly. Then again, any $25 knife with a factory fresh sharpening had better do this effortlessly! I like the offset handle. I'm not sure why, but it seemed to give me a little better grip and angle. I was really buying this knife for that feature, so good news there!
A few words about the appearance of the knife: When you see this knife, you will probably think back-of-house, automatic dishwashers, and piles of onions. That's fine, this is a commercial grade knife and is marked NSF on the blade. It was not meant to be used on a buffet line slicing prime rib. Mine has a noticeable ridge in the plastic handle and probably could have spent a little more time in the finishing department, but it's minor and easily fixed. There's no reason in the world why this could not go in your dishwasher routinely, other than that it edge may eventually damage your dish racks.
Here's the 'little bad' part, and a bit of a disclaimer: The manufacturer calls this a sandwich knife, and it is probably the best knife ever for cutting a sandwich. But, I think there was some expectation, particularly after Bourdain's recommendation, that this was some kind of perfect wonder-knife and that's not exactly the case. The blade edge is scalloped, which makes it not so great for fine chopping. In addition, the blade is nearly straight, which precludes the traditional rocking chop. This knife is meant to saw, and it does that well.
If I could only carry one knife, it would probably be this one. But it would be best paired with a traditional chef's knife. F. Dick makes a nice one of those in their Pro-Dynamic line at a very reasonable price.
