AGEs, while known as dangerous for a very long time, were never linked to today's foods--especially the industrial heat-processed type - but also to our own favorite methods of cooking that tend to be abused, like broiling and frying. That AGEs are the stuff that makes food tasty as well as nasty--when cooked this way--was a truly important clue taken away from reading this book.
Another revelation was that we put ourselves at risk not just by eating too much fat or sugar but by mixing these together over heat during cooking, since this is when AGEs are made! That was an "aha" moment for me!
But the strongest argument made by this revolutionary book is that the problem appears to have a solution: the risk of these diseases can be reduced if we simply changed the way we eat--for instance, by using less heat but more water! Simple! There seems to be no need to starve! The idea alone is as ingenious as deliciously simple! To this end, not only the scientific background (convincingly presented by the authors), but also plenty of very practical and detailed information about cooking methods and specific recipes for a great variety of delicious meals is made available.
The "AGE-Less Way" makes for a thoroughly enjoyable and informative reading, likely to leave a lasting impression on everyone, whether interested in eating, cooking controlling weight or just staying healthy and living long enjoyable lives--in other words--all of us.
