Testing it again, just with a boiling tea kettle of water, it should have registered 212, but again stopped at 200 and then crept back down.
For making hard candy, I find that it is best to use a small enough pan to insure the thermometer submerges at least 1 inch. If you are using the lid method to assure crystallization does not occur, adjust the thermometer to the side of the pan and then remove it while the lid is on. When you replace the thermometer, it will remain in the same position. In order to deal with not being able to see an exact temperature on the dial, it is best to have a bowl of cold water close by in order to test the candy stages. So when the dial looks like it is close to the required temperature, I drop some of the syrup into the cold water in order to be sure it is ready.
Still, a good thermometer. I put it through the dishwasher a few times and it still was accurate. I was just always a little unclear as to exactly what temperature I was reading.
I would not purchase this thermometer again or recommend it to anyone.
Because of the way it had to go in the smoker, I removed the clip that it comes with. For those looking to add it to their smoker...cut a real cork in half, drill a small hole. Push the first half on the back of the thermometer to keep the dial off the smoker. Drill a hole in the smoker where you want the thermometer, insert the probe and use the other half of the cork to hold it in place on the inside.
Good item. There may be more accurate items better for oil or candy, but this serves the need at the right price.
