I was introduced to this magnificent book by a friend and couldn't wait to get my own copy. It is worth every dime spent.

This is the kind of book/cookbook that you will not part with and will look forward to giving as gifts (please note that this book would give a vegan/vegetarian nightmares as it is very graphic...seriously).

Whether you're a hunter, fisherman, outdoorsman, history buff, homesick cajun or just a cook looking to expand your repertoire, this book has a lot for everyone! It has nice heavy-weight glossy paper, good solid binding, tons of photographs and illustrations, a terrific historical information section and beaucoup great recipes, starting with, of course, the rouxs (multiple roux recipes).

My old cajun MawMaw fixed many a creative and delicious meal using possum, squirrel, coon and other mysterious vittles (the critters and parts of them that regular folks definitely did not eat!) that I genuinely do NOT want to know the identity of. Most of these meals were born of necessity...poor farming people in the depression ate what they could kill. I am convinced that a good cajun cook can make ANYTHING taste fabulous.

Folse has recorded in this book a stunning variety of recipes using all those lesser known delicacies including nutria, beaver, muskrat as well as hunting standards like deer, rabbit and duck. Should this "recession" that we are currently experiencing turn into a long-term depression, this cookbook will be worth it's weight in gold for those trying to stretch scarce food dollars.

I had never actually READ a cookbook before I got my first John Folse cookbook. I received the Encyclopedia of Cajun & Creole Cuisine as a gift and started flipping through it as I do all my cookbooks. The thing that captured my attention the most was that the first group of chapters aren't recipes... they were about the history BEHIND the recipes. I ended up reading it cover to cover. When After the Hunt came out I could not wait to get a copy. This cookbook is in the same format. The first group of chapters are all about the history of hunting in Louisiana and cooking your harvest. That's just the start. The recipes are out of this WORLD! The Green Onion Venison Sausage recipe is beyond compare. The Duck & Sausage Gumbo is a staple at our house as well. Great book!

A glorious pictorial; educational, beautiful and totally fun! Cookbook collectors, it's a definite. Even if one never prepared a dish (say not!) it is a beautiful object.

I gave this to My hunny and his jaw dropped to the floor because it was signed by the author. I like it because it has recipes you wouldn't find elsewhere, like game animals...Squirrel, dove, Deer... I kid you not it has some recipes that I raised my eyebrows at but I know that someone in my family would have made at one time...(come from a family of hunters)

I purchased this book for my father because everytime he comes to my house he sits at my bar with this book. He loves this book. Although my father does not cook and this is considered a "cook book" with many, many, many recipes inside, it also has stories of hunting clubs and histories of hunting which he enjoys. It is a wonderful book for a hunter, a chef or a Louisiana history enthusiast.
