I enjoy eating and as author of the tirm&TERRIFIC® cookbook series, I strive to create recipes that are easy, healthy and delicious. Dr. Gerald Miletello, an oncologist, provided the motivation for this book. Because of my love of food, this is an opportunity for me to use my expertise in recipe development to create appropriate and best tolerated food addressing the side effects of cancer treatment. PEOPLE WITH CANCER STILL NEED TO EAT! I started researching nutrition and diet for cancer patients and found the information available to be very technical, made claims or insisted on a radical new style of eating patterns.
I believe a person should not have to eat food that does not taste good. My "no sacrifice of
taste" philosophy throughout my trim&TERRIFIC® cookbooks is my approach once again in creating tasty, healthy, and easy recipes. My challenge was to provide appealing recipes that ease side effects during treatment. Good nutrition and eating is essential to staying healthy and having the necessary energy.
Working with Dr. Miletello provided me with an understanding of what happens to a person
having treatment. With this in mind, I tried to focus on quick recipes and include foods labeled as the "super foods" helpful in fighting cancer: cruciferous vegetables, yogurt instead of sour cream, beans, fruits, garlic, beta-carotene rich foods, fiber rich foods, beans, and fish. The recipes I created are familiar and include favorite foods but with an awareness of what a person can eat at each stage of treatment. The Caregiver chapter is helpful for caregivers, family and friends. After treatment, hopefully, the joy of eating will return and the Healthy Eating Post Treatment chapter has recipes for a long term healthier lifestyle.
Each recipe includes the nutritional analysis and diabetic exchange. Optional ingredients
are not included in the analysis. Doc's Note, Nutritional Nuggets and Terrific Tips provide each recipe with valuable information. As I tested these recipes on my family, I must emphasize that anyone who enjoys a healthier approach to cooking, with or without a health problem, will also enjoy this book.
As I began my work on this cookbook, it became very personal as my father was diagnosed with larynx cancer and had to undergo treatment. Today, almost fourteen years later, he speaks with an artificial larynx, however, is doing well. Eating is a necessity and I hope these recipes will make treatment a little easier with the comfort of food. My father and I love eating, and I hope he will continue to enjoy the Healthy Eating Post Treatment chapter for many years to come as you or your friends will! Cancer has touched everyone's life in some way and at some time. Gerald Miletello and I hope our book will touch you.
Through the years, I have had requests for a Spanish edition of the cancer cookbook, so I am very pleased to offer an updated, Spanish version. Not only is everything translated to Espanol, but also with the help of Chef Zoe, the book offers relatable traditional Spanish recipes while still focusing on health when fighting cancer. I enjoyed testing recipes that reflect the cuisine of not only Mexico, but South America, Spain and Cuba, as well. The book is translated to accommodate the language variances from each of these countries in hopes to make a difference in your life while undergoing cancer treatment.
