I became an intermediate to professional canner based on watching one video and using this canner. I use the National Center for Home Food Preservation website for guidelines. Anyone can do it!!!!
If you are looking to homestead, to preserve a harvest, or preserve produce you caught on sale, then you won't be disappointed in this canner. It's heavy duty and I can see it yielding batch upon batch of canned foods year after year.
Any regrets???.... I wish I'd gotten a larger size.

Canning review revisited... Ok. I got this guy in November. It is now May. I've used it quite a bit and can say that I love it! My freezer loves it, too because now I have more space in it. I am canning jars of chicken stock and not using up freezer space! I am canning jars of leftovers! My neighbors hate it, though, because when I make a big batch of something, I can the leftovers instead of giving them away. Now I have all my soups anytime I want them. Hello, Albondigas, Minestrone, Beef and Barley, Chili, Creamy Tomato, to say nothing of GUMBO!! I can keep it and not have to give it away!
Also, before I bought this canner, I was reading the reviews (thank you, everyone for your reviews) and people were saying they were having a problem getting the lid to seat correctly or they weren't able to get pressure. I've never experience that problem and I think I know why. Every third time I use my canner, I take a Q-Tip dipped in olive oil and run it around the beveled part about 1/2" from the top of the pot. And I do that faithfully. Another thing I do that I think is the reason I'm always successful is when I first put the lid on, right after I slide it to lock in place, I make sure that it's on evenly all the way around. If it's not, I adjust it bit by bit until it's on straight. THEN when I am tightening down the latches, I give one a twirl, then the one directly across from it, then the one next to it, then the one directly across from it and so on until they're all on tight. And I check to make sure the lid is still on straight. No failures!
Three tips from using my friend's All American Pressure Cooker: 1. Do yourself a favor and go to the All American Pressure Cooker website and watch the video on what constitutes a "jiggle". 2. Rest assured that the column of steam you are looking for will not be a thick full column of visible steam, but instead means that there is constant flow of air out of the vent. At one point I started to second guess this and kept looking for a thick visible column of steam and it caused me to over-process a couple of batches. 3. I found it helpful to use a ruler (or other guide) to make sure the lid is on evenly. While I could tell if the cover was way off - it would definitely look uneven - it was nice to have something to measure with to be sure.
Also, a lot of people wonder what type of range they can use this with. I have a Frigidaire ceramic electric range top I called them and they said since the Pressure Cooker is quality aluminum that it is fine to use. The only worry is with scratching the surface of the range, but it will be a cosmetic issue not a functionality issue.
All American Pressure Cooker HAS AMAZING CUSTOMER SERVICE - the hours are all Eastern Time and work hours, so not the most convenient, but they have helped answer so many questions about canning and preserving different items not listed in the booklet that comes with the cooker.

I had no idea that shortly after I wrote my review about the All American Pressure Canner, that a Virus would be sweeping the world with many cities and people being locked down and quarantined. It is ALL the more reason to pressure can some meat for long term storage for whatever happens. Does not hurt one bit to prepare, you can always use it later.. or it’s like having your own food bank. You make a food deposit and then a food withdrawal when you need it.

This is the warning on the outside of the box. Unfortunately for me, I had not researched whether or not I could use it on my ceramic top. I had read some reviews from people who use it on flat cooktops and their concerns were the fluctuation in heat with flattops, however they had given wonderful reviews saying they were able to attain the required pressures for proper canning. I placed a call to the manufacturer and their concern for flattop stoves is not just with temperature fluctuation it is also with the weight of the product and the damage that this weight can do to your appliance. They suggest calling the manufacturer of your stovetop as a precaution and asking them the maximum weight for the cooktop OR purchasing a heating plate for your canner instead of using your flattop. The manufacture states that use of the canner on your glass, ceramic of flat cooktop is completely at your own discretion and risk and they do not recommend it.
I will still give this product 5 stars because I have read enough reviews that I feel the product itself warrants a good review. Perhaps this will help someone like myself who missed the manufacturer warning in their own research :)
