If one comes to the AllClad pans after using teflon coated aluminum pans (even good Cephalon pans) some readjustment is in order. These take longer to heat up and they get hotter at a given cooktop dial setting.
For instance, I cook scrambled eggs in olive oil on a Cephalon pan at a dial setting of 6 on my GE glass cooktop. At that setting the olive oil never smokes and the eggs never burn. At the same dial setting the AllClad gets so hot (400° measured) that it smokes the olive oil and burns anything in the pan.
I recommend using a good infrared thermometer to gauge the actual temperature.
Cleaning is not as easy as the promo videos show, at least not if you cook with olive oil or Crisco. Both will form a tan residue that requires some scrubbing with the AllClad cleanser or Bar Keepers Friend.
The upkeep on these is more than for teflon pans but these much more versatile and take abuse that would kill a teflon pan in no time flat.

However there are a few caveats: don't expect the shiny chrome colour it comes out of the pan with to last forever. If you want to maintain it you better bring out that old elbow grease (and some barkeepers friend).
Mine was only slightly warped out of the box (I'd say within machining limits so not worth the hassle of a return), so be aware that even though you're buying the most expensive pan on this market segment this is still a thing.
Also the chrome layer must be very very thin as just setting it in a range cooker with cast iron supports during first use scratched the bottom. Again, I don't mind and I expect metal to behave that way... But don't forget this is a 200£ pan.
All in all the pan is clearly built to last a lifetime if you look after it properly. But it's not the miracle pan Internet experts or America's Test Kitchen would have you believe.
Is it worth the price they ask for it? Definitely not, it's a piece of treated machined metal built to get very hot repeatedly... So only buy it if you understand you're overpaying or paying for the brand name and you won't be disappointed.
If you're skint just look at cheaper carbon steel alternatives or even stainless steel without the All-Clad logo, you'll get the same out of them if you know how to use them for a fraction of the price.
UPDATE: Customer service was useless. Very expensive to ship the pan to them and even if they determined it was defective, they wouldn’t cover shipping. Offered to drive it there myself and drop it off and pick it up, and this wasn’t an option. Terrible quality, overpriced pan. End of my relationship with this brand. Completely useless warranty. Awful company. DO NOT BUY (this pan or anything else)! I’ll be taking a stump and sledgehammer to this thing in the summer to see if I can flatten it out.
Got it for under 100 bucks which is a great price for this quality pan that will last decades. You get what you pay for, and All Clad really can’t be beat for quality. I use cast iron, carbon steel, etc. but needed something I could deglaze and not have to worry about seasoning. A great addition.
