I received this pan today and made dinner for the family with it. It works well. The lid is reasonably well-fitting. I'm commenting here to note that when I saw this deal I wondered if it was too good to be true, but it's in fact the genuine article. And also - this pan is significantly lighter than my five- or six-year-old all-clad stainless 12" fry pan (which needed replacing after operator error) - about 1.22 kg vs 1.38 kg according to my kitchen scale. That's a plus for ease of use and cleanup, but the reduced mass must mean less heat retention if the design hasn't changed.

This pan was recommended by America's Test Kitchen, and I can see why. It is the best pan that I have ever used. It is very even heating and has a large, useable cooking surface. It cleans up well with Barkeeper's friend cookware cleaner. It looks as good as it cooks. The pan is normally $130 without the lid, so at this price it's a bargain. Don't think twice, it's well worth it.

I'm a 50 year old male who is just starting to experiment with cooking and have decided to make my new hobby more enjoyable I need to start upgrading to some good quality equipment to use in my kitchen while I'm learning to cook. In the past for what tiny bit of cooking I did I'd always used non-stick pans since I'd heard horror stories about how hard it was to cook on stainless steel (SS) pans due to everything wanting to stick and burn and be almost impossible to clean after food got burnt on.

While I was waiting on my new pan to arrive I did a lot of research online at the Cooks Illustrated website and also at YouTube to see if I could find helpful information to make my learning curve with SS pans not be so trying. In addition I also read every review for this pan here on Amazon and while most people love their All Clad SS pans there were enough complaining about not being able to cook eggs and other things without them sticking and messing up their pans that it worried me. So what follows is what I learned and how it's affected the outcome of my first day using the All Clad 12" SS fry pan.

One tip I kept seeing was to make sure your pan is heated BEFORE you put any oil in it. Oh, and also it's very important to start out at a lower heat than what I'd normally use with my non-stick pans. Then there was also advice I found that stated that if you leave your eggs and meat out to get to room temperature before putting them in the fry pan that will also cut back on the amount of sticking. To speed up the warming of the eggs I used a tip from online about soaking them in warm water warm them faster and it worked great. So when I decided to just go for broke and make my first try ever at cooking on SS pans and having 3 fried eggs being my big test.

I bought this 12 inch All Clad skillet based on the reviews, the fact that it came with a lid, the price was great at Amazon. My landlord replaced my old 4 burner stove with a smooth top, and I needed to replace my 40 year old copper bottom Revere Ware because the bottoms were rounded.

I've been using my new All Clad pan for two or three weeks now and really like it, although I must admit I did have a learning curve to go through. The first time I used it, I burned the food and really made a mess of the inside of the pan. The temperature was way too high. It cleaned up nicely, though. I just used a little water with baking soda and let it soak for a while, then Barkeepers Friend and it was as good as new.

After experimenting for a while, I find if I cook at medium temperatures, everything turns out great and there's minimal sticking.

The balance of the pan is good, and weight is also good for it's size, but when the pan is full it's a little heavy. If I could make one suggestion on how to improve this product, I would say add a helping handle. Over all, I'm very happy with this purchase. I would rate this pan 4.5 stars.

After using this frying pan I will no longer buy the non-stick pans. This pan cooks so even and browns up so much better. I've purchased top of the line non-stick pans in my life only to be dissappointed shortly after I buy them. This pan is also beautiful. It shines up great. The lid is a plus. It is clear so you can see right thru it. Since I bought this pan and I like it so much, I also plan on widening my collection of the All Clad brand. The only down fall is the price. But if you shop around like I did, you will be able to find a pretty good deal.

I decided to write this review because of a couple of extremely negative reviews that appear here. Folks, this pan is definitely the real thing, beautiful, made-in-America(!) quality. I wanted it because of America's Test Kitchen's recommendation, and it is just as they describe. If you can, find a copy of the January-February issue of Cook's Illustrated for a comparison with other major brands - this is the hands-down winner. I'm still learning to use it (on one of those frustrating glass-top ranges), but I'm delighted with its quality and performance. Ignore the complainers (especially the one with the x-ray calipers!) and treat yourself to a versatile skillet you'll probably leave to a loved one in your will.
