This note is for all clad. Seriously loose the oversized lid handles. That's just vain to turn a handle into a badge when all it does is add weight. even the sheet metal on the lids is overly heavy for no good reason. So making the pans work as well without making them so damn heavy should be one of your top goals. The pans in a pro kitchen are generally just thick aluminum for a reason. Another thing, I think you are not putting the same effort into ensuring your lids fit good as you once did. I think this has been some what obvious to me from what I have seen lately. I suppose the truth is that most who buy your higher end pans do so for status not cooking. That said you can still built for utility first. This is just my opinion.
