The Good: Flat bottoms maximize contact with glass top and traditional ranges for better heat control. The copper core acts almost as well as a solid copper pan on a gas range. The pans and lids are oven safe to higher temperatures than conventional ovens will heat to. The rounded lip makes it easy to pour sauces without spilling or running the sauce down the side of the pan. The handle stays cool. The stainless steel cleans up extremely easy. The stainless steel does not react to tomato or other sensitive sauces.
The Neutral: The frying and sauté pans are stainless instead of non-stick. If you don't follow the traditional method of preheating the pan and oil they will stick. If you follow the proper instruction, they fry and sauté perfectly. The lids get quite hot. This is not surprising as every chef grade pan I have ever used gets a hot lid. If you like to display your cookware the stainless steal and copper spot with certain waters. This is easily solved with your favorite scouring powder.
The Bad: Obviously price, but you will never have to replace these pans so think of it as an investment. The handle on the 3 quart or larger sauce pan is extremely long making the pan quite heavy. This is countered by having an additional small handle on the other side of the pan. The overall weight of all pans is surprisingly heavy. This is not a problem for me, but my senior citizen mother complains about the weight.
I use this saucepan for small sauces and to do small water boils for things such as poaching eggs and small servings of pasta. It is perfect for these projects.
The construction is superb. Truly a thing of beauty, the pan is solid, perfectly machined, and the inside is smooth and gleams with stainless steel perfection. It is not non-stick, but fairly stick resistant if used correctly. Even if you really stick something to it, like I did with a poached egg that went awry, it is easy to clean with (manufacturer's recommended) Bar Keepers' Friend.
If you appreciate well-made, beautiful, useful things, you will enjoy this pan.
Construction quality is outstanding - they will likely outlive me. Evenness of heating is amazing...this is why you buy the Copper Core line - much better than the others, easy to clean, works terrific on induction cooktops - really, there isn't a bad thing I can say about this (or any other) All-Clad product. Only possible drawback is that these are heavy pots, so if you're a petite cook, you might find that they give you a workout.
Pan heats up fast on medium heat and the low temp cooking that sauce pan accomodates well, makes cooking puddings well, by making it easy to bring the milk based pudding mixture to a boil in a reasonable amount of time. Cooks hot breakfast cereals well, and the realatively low temps that this saucepan requires to cook foods make it easy to avoid burning simmering foods, as long as I correctly follow the recipe directions, or give the cooking food the amount of proper attention that it needs. The pan even did a good job pre-cooking the one cup of Basmatti rice that I use in my easy chicken and rice soup that I like to make.
clean-up is as easy as most stainless steal pans. I use a non scratch scour pad and also clean it with cool water when the pan is still hot. That method makes easy the needed pushing away method to loosen most any stubbornly stuck food residues.
