My recommendation would be to first grill the food in this wonderful pan and then to guarantee a safely cooked center, finish up with a few minutes in a nice hot oven. This is especially true with thick cuts; like a 1.5" rib-eye! An example of my most recent use of this pan involved some very thick (2") chicken breast. We cooked it for approximately twelve minutes in the pan, flipping the meat a couple of times. This produced a great aroma and seared the outside of the meat just right. The breasts were then wrapped in foil and placed in the oven at 350 for about eight minutes. Total cook time was about twenty minutes and we had just about the best chicken we've ever cooked indoors!
The grill/bake method mentioned above was not only to ensure thorough cooking but also to quell the high amount of smoke that was quickly taking over our kitchen and dining room. A number of reviewers mention this and I concur; smoke can be a real problem when cooking with this pan without adequate ventilation. Our range top vent is on the blink currently and this contributed to the problem. A fan placed in our kitchen window just was not sufficient with the amount of smoke that was produced by two large chicken breasts cooking in our new Emerilware. Given the fact that the pan is new, we'll give it time as I've been told that after repeated use the smoke issue subsides considerably. Still, I would not recommend this pan if you do not have good ventilation in your cooking area; if I tried using this thing in my first apartment, someone would have surely called the fire department... :)
One last note, we live in a cold climate so running the outdoor grill is out of the question this time of the year. In fact, the night we cooked chicken for the first time using this pan it was 10 below zero outside! If you too have to stay indoors this time of the year, buy one of these pans and you'll get that grilled flavor back without having to wait till summer...
