Cooking with Stainless Steel Cookware
Oven- and broiler-safe All-Clad stainless steel cookware is designed to distribute heat quickly and evenly, preventing hot spots and sticking. Preheat your cooktop on low to moderate heat--high heat should only be used for boiling. For best results, keep the following in mind during cooking:
1. Preheat your pan before adding oil or butter.
2. Use 1 to 2 teaspoons of oil or butter to maximize browning and minimize sticking.
3. Overheating can cause brown or blue stains to appear. Food films, if not removed, will cause discoloration on the pan once it is reheated. Large amounts of iron content in your water may cause your pan to look rusty.
4. To keep small white dots or pits from forming in your pan, bring liquids to a boil or wait until food starts to cook before adding salt. Pitting does not interfere with cooking performance but can diminish the beauty of your pan's interior.
After years of perfecting the bonding process, company founder John Ulam established All-Clad Metalcrafters in 1971 and began producing professional-quality bonded cookware for working chefs and avid home cooks. The brand flourished as early adopters discovered the cookware's extraordinary properties and exemplary cooking performance. Today, All-Clad cookware is still handcrafted in Canonsburg, Pennsylvania, with American-made steel--the same way it was four decades ago. It is widely sought after by the world's top chefs and passionate home cooks.

I needed a good sauce pan to use with my new Max Burton portable induction cooktop. This particular model is at the top of almost every cookware review as the best sauce pan you can buy. Cook's Illustrated has it at the top of their ratings. Sometimes these reviews are correct, and sometimes they are not.
In this case the reviews are correct: this is the best sauce pan you can buy.
It heats evenly; it perfectly transfers heat from both a gas stove and a portable induction cooktop; and it provides a beautiful, smooth stainless surface that doesn't interact with any food. The lid fits tightly for those times when you want to simmer for a long time without losing much liquid.
My only issue -- and almost everyone mentions this -- is that the handle is too long. I guess this was done to keep it out of the heat, and also to let you easily get to the pan if it is placed on the back burner on a large commercial stove. On my more modest home stove, this really isn't needed. The long handle does get in the way of the faucet during cleaning.
However, while cooking, the handle is not an issue, and the pan's cooking performance really can't be beat. This is a great pan.
What really appealed is the helper handle. Otherwise, a fully-laden 4 quart pan would weigh 8 pounds plus the weight of the pan itself, and be very difficult to handle - probably *impossible* with one hand. All-Clad does sell that size without the helper handle, but this is much easier to use.
It can cook enough pasta for my family without dragging out the stockpot and spilling the water everywhere when I try to drain it. It will be great for candymaking (though I haven't tried that yet) - probably even large enough to make a double batch of fudge.
It *is* heavy - which I was expecting. It's not the easiest to lift one-handed even when empty. It takes up a fair bit of room in the cupboard - again, as expected given the size. But those are negligible issues, and I foresee using this for many years to come.
