Inexplicably we were carpet-bombed with video recommendations for Japanese soufflé pancakes and soufflé omelets. Finally broke down and tried it, because the daughter could no longer look at those anime-perfect 3-inch thick pancakes with melting butter pads and dripping syrup, without trying it.
Some part of my Jungian unconscious suggested I get cream of tartar to stiffen the meringue. I have no idea how I knew to get it. I recall early memories of cream of tartar in the cupboard but it was never used. So I got it, and it works.
I like it better than lemon juice or vinegar because it adds no water or flavor. I tried citric acid, but it was too easy to over-dose the eggs, resulting in a bitter mess.
We still have not figured out how to keep our pneumatic pancakes and eggs from deflating once the heat is off, but with this Amazon product we have plenty of cream of tartar to keep trying.

Everyone agrees that my banana bread is the best, and this cream of tartar is an important part of that recipe. That may leave you wondering why I would need such a large container of cream of tartar, just to use 1 teaspoon in a recipe from time to time. Well, the super soft cooked play dough that I make with and for my kids uses it in larger quantities, so this is a way more cost-effective way to go. I have also "gifted" some to family members in jars for their own dough-making.
I had burnt some chocolate onto a pan while making fudge. I scrubbed with a brillo pad and tried scraping it off and nothing worked. I was about ready to throw the pan away when I remembered my mom using cream of tartar to clean a burnt pan. I poured lots of the cream of tarter into water that was just above the burned section and boiled it. I let it sit for a few minutes and most of it scraped off easily. Then I stirred it up and boiled again and the rest came off. I'm glad I don't have to throw the pan away because it is part of a set I like a lot.
I use Cream of Tarter to clean my stainless steel, so I can go through a lot at one go. Normally, this stuff is seriously expensive, but this jar from Amazon is priced very reasonably. In fact, it is the cheapest per ounce that I have ever seen. Honestly, this is what the price should be for this product.
And it is just like the stuff that costs so much in the market. I got so much, so cheap, that I will be sharing it with a friend of mine who I just bought a stainless steel cook set for housewarming (now it's time to teach her how to keep the set looking new!)
If you are in the market for Cream of Tarter, or just want to keep some on hand for when you need it, I highly recommend picking up a jar from Amazon -- it's a great deal!
