I contacted Meyer warranty service about the curvature, and the agent told me that their pans are all "designed to be a little concaved in the center and as it warms up it will even out to a flat surface." She also said it should be "very slight and not noticeable."
Since the curvature in the pan was more than "very slight", I returned it to Amazon for a replacement. The replacement has an identical curve across the short direction, and was also twisted so that it rocks across opposing corners when placed on a flat surface. That one went back for a refund.
I make an expedition to Macy's and found that 5 of 5 examples in the store were also curved across the short dimension. Given the consistency, I supposed that perhaps it was intentional, and perhaps the griddle that Cook's Illustrated tested had exactly the same curvature. So I decided to pick one out and give it a try. I checked to make sure I got one that wasn't twisted, and one of the two I checked was twisted. So that's not exactly confidence-inspiring either: of the two I got from Amazon, I noticed that one was warped when I set it down, and of the two I placed on a flat surface at Macy's, one was warped.
I took my curved but non-twisted Anolon griddle home and cooked pancakes on it, over medium heat on a gas stove. When I ladled the batter onto the griddle, it headed for the edges. They browned evenly, which is pretty impressive, but I had a bunch of pancakes with one or two straight edges. Given that Cook's Illustrated commented about funny-shaped pancakes when the batter ran into the gutter of the All-Clad griddle, I suspect that their Anolon griddle didn't do what mine did.
Bacon fat likewise runs toward the edges of the griddle when cooking over medium heat, making it clear that the cooking surface does not become flat when cooking, as the Anolon service agent claimed.
I wish I could buy a better griddle, but this was the correct size...and being an Analon product, I had high hopes. I'm skeptical about ordering a replacement in hopes that this was just one bad griddle in a pile of otherwise perfect ones, so for now I have just scheduled the return.
