The exposed metal version, the food sticks to it.
The non-stick surface works great and it's easy to clean. The only thing that surprised me though is that it tends to have a hot spot (see update note below). I've noticed that things cook a little faster in the region closest to the handle. That seems strange to me. I have hot spots on my BBQ grill, but I've never noticed this in a pan before. I even tested it out by cooking batches of bacon and turning the pan around. No matter how I oriented the pan or the strips of bacon (north to south or east to west), the strips of bacon or the ends of the strips closest to the handle cooked faster.
This pan looks nice, cooks well (except for the hot spot), and cleans well. The sticker on the pan says that it's safe to use metal utensils, but I don't plan on testing that.
We've owned this pan for less than three months now. My wife loves it so much that she just made me order another one. That's about as high praise as I can imagine. The pan works great and cooks fantastic. I have a hunch that she's going to make me order her a third one for our RV.
UPDATE 2 (July '16): We now own four of these: two in our home and two in the RV. That's about as high praise as I can think of. And about that hot spot in my original review...either I got used to it or it went away, because I can't find which pan had the hot spot anymore. We're all good now.
I also purchased the glass lids: Anolon Advanced and Bronze 10-Inch and 12-Inch Glass Lids Twin Pack
and I end up using these pans nearly every time I cook. With the lids, they are stellar for braising asparagus in chicken broth and other types of cooking requiring that the heat/steam be contained (but always over medium or low heat - never high!!).
The rubber handles are fantastic too, meaning no need for oven mitts or potholders, which are necessary sometimes to prevent burns from the hot handle of the pan, but sometimes cause a less secure grip, which increases the chance of spills - and consequent burns from the contents of the pan.
Cooking performance is wonderful. Nice even heat with no hot spots. The interior is so nonstick, that a fried egg placed in the center of the pan will slide to one side if the oven isn't level! Handle is comfortable and stays cool.
You have to hand wash it, but cleanup is a breeze. Nothing sticks. I've had mine for 3 months and use it at least two or three times a week, but it still looks brand new, inside and out. I'm always entertained by the fact that the interior is so slippery that when I rinse it, I don't have to dry it, because even water doesn't stick to it!
I noticed when I got mine that there was some variation in the color of the interior nonstick surfacing. This worried me at first, but it is a purely cosmetic issue and doesn't affect cooking or cleanup.
I paid 21 bucks and change for mine on sale. Definitely a bargain! Highly recommended.
