My sweet, loving granddaughter, Arielle, requested that my lovely wife of almost 48 years of marital bliss, Linda, make ANZAC biscuits for her birthday.
As a former history teacher, I feel compelled to share the origins of these delicious cookies.
Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. The biscuits were sent by wives and women's groups to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation.
Anzac Day is a national day of remembrance in Australia and New Zealand that broadly commemorates all Australians and New Zealanders who served and died in all wars, conflicts, and peacekeeping operations and the contribution and suffering of all those who have served. Observed on 25 April each year, Anzac Day was originally to honor ANZAC soldiers who fought at Gallipoli against the Ottoman Empire during World War I.
At the risk of providing too much information. I purchased the beer mug on the left in 1965 when I was a knob at The Citadel. I "liberated" the beer stein on the right in 1971 while a lieutenant in Germany. I am certain that the statue of limitations has long since expired. Both are now serving a much more useful purpose as the repository of kitchen utensils.
Linda's recipe:
1 cup oatmeal ¼ cup boiling water
¾ cup desiccated coconut (unsweetened)*
1 ½ teaspoons baking soda
1 cup flour
4 oz. butter
1 cup sugar
2 Tbs. golden syrup
Combine butter and golden syrup, stir over low heat until melted. Mix oatmeal, coconut, flour, and sugar together. Mix soda with boiling water, add to melted butter mixture, and stir into dry ingredients. Spoon on to greased cookie sheet, allowing room for spreading. Bake at 300 degrees for about 18-20 minutes.

No Bake Mulberry Snack Bars
Ingredients:
- 1 cup Anthony's Dried White Mulberries
- 1/3 cup water
- 1 cup Anthony's Blanched Almond Flour
- 1 cup Anthony's Shredded Coconut
- 1/3 cup Anthony's Coconut Oil
- 1 teaspoon vanilla extract
- Place mulberries in a microwave-safe bowl and add the water.
- Microwave 2 minutes and drain.
- Place in a food processor and add remaining ingredients. Process until combined and the mixture starts to look like dough.
- Press evenly into a 8"x8" glass baking dish.
- Chill until set.
- Cut into squares.
Prep time: 10 minutes
Yield: 16 squares
5 Ingredient No-Bake Macaroons
Ingredients:
- 2/3 cup Anthony's Unsweetened Shredded Coconut (lightly toasted if you like)
- 1/4 cup Anthony's Blanched Almond Flour
- 3-4 tablespoons honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- Mix together all ingredients and form into balls.
- Chill or freeze until set.
- Store in an airtight container in the refrigerator.
Cinnamon Coffee Cake
Ingredients:
Cake
- 5 eggs
- 1/2 cup butter, melted
- 1/3 cup Anthony's Erythritol
- 1/3 cup Anthony's Coconut Flour
- 1/3 cup Anthony's Almond Flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 cup Anthony's Shredded Coconut
- 1/2 cup Anthony's Almond Flour
- 2 tablespoons Anthony's Erythritol
- 1 tablespoon cinnamon
- 4 tablespoons butter, melted
Directions:
Cake
- Preheat oven to 350° F
- Grease a 9" cake pan
- Whisk the eggs in a large bowl with the butter and erythritol then add the coconut flour, almond flour, cinnamon, and baking soda.
- Mix well then transfer to prepared cake pan.
Streusel
- In a small bowl, mix together all streusel ingredients and crumble over cake.
Bake cake for 25-30 minutes.

On one of the bags (pictured here) the seal was already torn off the side the very first time I opened the bag. :( The rest won't seal back up no matter what (I tried many times). Opened it as soon as I got it. I was so afraid to buy coconut shreds online because I don’t like the bigger and “moist” ones and was afraid they would be like that. These are perfect! They are the dessicated type and the size of shred is perfect. I love to use them as a topping for my açaí bowl, or as a base for pie crusts, I even use them to make my own coconut butter. Also when I opened them I got a huge delicious whiff of coconut, I can tell it’s fresh. Will definitely be buying again!

I got this 2 pound bag on a lightning deal and it was fresh and tasty. Since I can not discern any difference in taste or quality from the other best selling brands, a major factor in my future purchasing decisions will be price.
